Subsequently they were given three different bottle feedings at isocaloric and isoproteic levels, recalculated daily: modified cow's milk; vegetable protein mixture of high biological value; and wheat flour enriched with 10 % deodorized fish flour , VioBin. One infant had additional periods of fish flour as the sole source of protein. Cottonseed oil and sugar were used to equate the caloric and fat intakes, and minerals and vitamins were added. Growth and nutritional status were studied with the help of nitrogen balance determinations at selected intervals. Growth data along with determinations of serum albumin and urea, hemoglobin and hematocrit, suggest that a rnixture of wheat and fish flour, 100 g. of which contain approximately 18 g. of protein and yield 350 calories, satisfies the energy and protein requirements of undernourished infants as well as cow's milk and a mixture of vegetable proteins of high biological value. When fish flour alone was used as the source of protein, the results were equally satisfactory . In a further group of infants, the wheat-fish flour product was used to initiate recovery with satisfactory results. In one infant, because of large, bulky stools and nitrogen wasting, it was necessary to replace the cottonsseed oil with a fat emulsion (Lipomul-Upjohn), noticeably improving absorption.","AbstractOtherLang":"Dans un groupe d'enfants sous-alimentés, avec ou sans ..kwashiorkor\", on a utilisé du lait de vache modifié pour faire démarrer le rétablissement de leur santé, pour stabiliser la composition de leur corps, et pour obtenir un gain de poids constant. On leur a donné ensuite trois biberons différents à des taux isocalorique et isoprotéique recalculés chaque jour: lait de vache modifié, mélange de protéines végétales à haute valeur biologique, et farine de blé enrichie de 10% de farine alimentaire de poisson désodorisée VioBin. Pour un enfant on a fait intervenir des périodes additionelles de farine de poisson comme source unique de protéines. L'huile de coton et le sucre étaient utilisés pour équilibrer la consommation en calories et en graisses, et on a ajouté des minéraux et des vitamines. On a étudié l'état alimentaire et la croissance par mesure du bilan de l'azote à intervalles choisis. Les données de croissance, avec les déterminations de l'albumine du sérum, de l'urée, de l'hémoglobine et des élements centrifugés du sang, permettent de penser qu'un mélange de farine de blé et de farine alimentaire de poisson (dont 100 g. contiennent à peu près 18 g. de protéines et apportent 350 calories) satisfait les besoins en énergie et en protéines des enfants sous-alimentés, aussi bien que du lait de vache ou qu'un mélange de protéines végétales de haute valeur biologique. Quand on a utilisé la farine alimentaire de poisson seule comme source de protéines, les résultats ont été également satisfaisants. Dans un groupe d'enfants étudié par la suite, le mélange blé-farine de poisson a été utilisé pour faire démarrer le rétablissement de leur santé, avec des résultats satisfaisants.
