Available evidence suggests that average consumption levels in Western Europe and North America are not likely to change materially in the foreseeable future. The outlook is favourable for selected products in the 'luxury' class characterized by high income elasticities. Consumption of less valued fish, on the other hand, may substantially decline with improvement in levels of real income. Greater emphasis on quick-freezing and advances in the fields of technology, transport, storage, and distribution can be expected to widen markets for fishery products, especially in some European countries. Demand may also be stimulated by introduction of new products, by careful attention to price policies and trade practices, and by intensified promotional activities.  Competition from other animal protein foods will, if anything, increase rather than diminish. In order not to lose their markets, therefore, the fishery industries of developed countries will have to maintain considerable flexibility in their policies, and see to it that relative costs are not allowed to get out of line. . Competition from other foods is much less important in developing countries. There is no question that fish consumption could be greatly expanded in most of these countries, provided: (1) increased supplies were made available in markets not adequately served, because of lack of facilities for transport and marketing, and because of various institutional factors limiting market quantities ; (2) educational campaigns were initiated to increase the knowledge of nutritional aspects and to break down superstitions and taboos ; (3) incomes were raised to enable consumers to enrich their diets by the addition of animal protein foods, particularly fish, the cheapest source of such foods.","AbstractOtherLang":"L'article résume les tendances principales de la demande en poisson comme aliment humain dans l'Europe occidentale, l'Amérique du Nord et les pays en voie de développement. Les données disponibles laissent penser que les niveaux moyens de la consommation en Europe occidentale et en Amérique du Nord ne se préparent pas, probablement, à changer matériellement dans un avenir prévisible. La perspective est favorable en ce qui concerne les produits de choix destinés à la classe supérieure caractérisée par de hautes disponibilités financières. La consommation du poisson de moindre valeur, par ailleurs, peut diminuer d'une façon notabIe par l'amélioration du revenu moyen. On peut s'attendre à un plus grand effort dans la congélation rapide et à des progrès dans les champs de la technologie, du transport, de l'entreposage et de la distribution qui élargiront le marché du poisson, surtout dans quelques pays européens. La demande peut être aussi stirnulée par l'introduction de nouveaux produits, par une attention soignée portée à la politique des prix et aux usages commerciaux et par des activités dynamiques en promotion de ventes.
