Since the food safety issues in farmed fish have predominantly been related to fish feed, this chapter provides an insight into the main groups of chemical compounds in marine feed ingredients and farmed fish that pose a potential threat to human health. In general, the two main groups of environmental contaminants are Persistent Organic Pollutants [“POPs”] and metals. The chapter provides a background on chemical characterization, environmental sources, and relevance for consumer safety of selected environmental contaminants. It focuses on the specific chemical forms and behavior of the contaminants in the marine system, occurrence in fish feed ingredients, their dietary transfer to farmed fish, and approaches to control and reduce these components in farmed fish.
