This applies also for the spring herring of the spawning population of the waters around the island of Ragen. Reduction of the fat content to about 5 % during the spawning cycle limits the processing possibilities of mature herring from this area. Failures in taste and odour (tainting), a common problem of the past have not been detected in the last 3 years. Infestation by nematodes are comparable to other herring stocks and contamination levels of organic and inorganic contaminants are well below allowable limits. The annual German fishing quota of about 85000 t of Baltic Sea herring is now utilised only to 10 %. For a stronger utilization of this stock as in the 70th and 80th , there are scarcely prerequisites. The project of a central processing plant on the island Ragen for about 50000 t of herring as raw material is not realistic. The answer to the question asked at the beginning of this article, whether Baltic Sea herring represents a raw material for the German fish processing industry, is YES, dispite some restrictions.","AbstractOtherLang":"Der Ostseehering stellt eine traditionelle Rohware fiir die Fischverarbeitungsindustrie und den Speisefischabsatz dar. Das gilt auch filr den im Friihjahr in den Riigenschen Gewassem gefangenen Laichbestand. Durch die Abnah- me des Fettgehaltes wahrend des Laichzyklus bis auf etwa 5 % ist eine umfassende Verarbeitung in der Fischindu- strie nicht gegeben. In der Vergangenheit festgestellte Geruchs- und Geschmacksabweichungen (Tainting) stellen in den letzten Jahren kein Qua1itatsproblem mehr dar. Das Vorkommen von Nematodenlarven entspricht dem anderer Heringspopulationen und die Riickstandsbelastung liegt deutlich unter den gesetzlich geregelten Grenz- werten. Ein weiterer maBgeblicher Qua1itatsfaktor ist die Gr6Be. Vor allem Stelln~tz- und Reusenfischerei k6nnen die fiir die Verarbeitung bevorzugten Gr6Ben 2 und 3 bereitstellen.Der geplante Bau einer Heringsbearbeitungs- zentrale auf der Insel Riigen fiir etwa 50 000 t Rohware wird vor dem Hintergrund der vorhandenen Fischereika- pazitat und der geforderten Qua1itatsmerkmale kritisch diskutiert.
