Abstract
    The present study has been undertaken to determine the quality and keeping time of prepacked cod (Gadus morhua L.) in relation to the temp of the refrigerated display cabinet. Prepacked fillets and portions cut from cod were stored for up to 3 days under simulated selling conditions and at 3 different temps: by day (from 9 to 21 h) at 1°, 4° or 8°C and by night at 1°C. Every day the decline in the bacteriological methods. The results indicated that a retail shelf-life of 3 days could be guaranteed-at 1°C: for prepacked fillets and portions from cod with an odour score of not < 8.0 (E and A on the E.E.C.-scoresheet).-at 4° and 1°C: for prepacked portions of cod with score E or A, and only for prepacked fillets of top quality cod (E.E.C.-score E).-at 8° and 1°C: only for prepacked portions of top quality cod.
