Abstract
    Herring and herring fillets were treated after freezing with a 0,5% solution of a commercial preparation of sodium alginate and stored for 9 months at -23C. For the round fish as well as for the fillets, rancidity was markedly inhibited. This effet was further enchanced on using airtight packaging.
